Lauren Spalding

Lauren (she/her/hers/ella) is based in Barcelona grew up in Portland, Oregon. Her curiosity about other cultures began at age 12, when she participated in a school trip to Costa Rica. She later lived and volunteered in a small community in Ecuador and then completed an internship in Argentina. After graduating with a degree in Psychology and International Relations, Lauren moved to Barcelona for a nine-month teaching job. It didn’t take long for her to fall in love with the city’s culture, food, and landscape—before she knew it, nine months had turned into nine years. She spent one year in Madrid while completing a master’s degree, though the international spirit of Barcelona ultimately drew her back to the Catalan coastline. In her free time, she enjoys going to the beach, exercising, cooking, and baking. If you’re ever searching for a hard-to-find baking ingredient, Lauren can probably help you track it down.
